The Brewery Operations Major, B.S. at Metropolitan State University of Denver prepares students for work in beer by combining brewery operations topics with hospitality and beverage-focused learning. Students work with brewery production and in-process and final product analysis in lab settings, supported by facilities such as the Charlie Papazian Brewing Education Lab and a QA/QC lab for alcohol content and nutritional analysis.
Learning includes a fully equipped 100-gallon facility for brewing, fermenting, packaging, and pouring student-made beer, plus spaces used for sensory analysis and a beer and wine cellar laboratory. Students also use Degree Brewpub, which serves 100% student-brewed beers, and receive microbiological monitoring through a collaboration with Microbial Domains LLC.
