A.A.S. in Culinary Arts

A.A.S. in Culinary Arts is a Diploma program taught at Catholic University of America, USA. The program is offered in campus-based modes with full-time (Two-year associate of applied science in culinary arts degre) options.

The A.A.S. in Culinary Arts from Kendall College combines culinary training with restaurant management practices. The curriculum covers basic culinary skills such as knife skills, culinary terminology, food science principles, professionalism, and menu development. It also covers advanced culinary skills such as timing and plating, seafood, meats and sauces, café production, alcohol service, dining room service, and special events and banquets.

Students build business skills through courses in restaurant management, including purchasing, staff supervision, and financial management topics. Additional coursework includes nutrition and sanitation topics such as HACCP, kitchen hygiene, food contamination and illnesses, pest management, and evaluating nutritional information. The program culminates in a 300-hour supervised internship at a Chicago restaurant with guidance from an experienced mentor.

Training includes lab courses in kitchen classrooms and participation in on-campus venues, including The Dining Room. After graduation, the program prepares students to enter restaurant roles with significant responsibility in a professional kitchen. Students may also choose to continue study to complete a B.A. in Culinary Arts or Hospitality Management.

The minimum requirements for admission in A.A.S. in Culinary Arts at Catholic University of America for all applicants (Domestic or International) are:

• program specific academic requirment set by Catholic University of America.
• English Language OR any other language requirments as set by Catholic University of America as pre-requiste for admission in A.A.S. in Culinary Arts.
