The Master of Technology Degree in Food Processing Technology at Harare Institute of Technology prepares students to analyse and solve problems related to creating innovative technologies for food processing, product development, and research. It combines theoretical and practical understanding of food manufacturing, product design and development, and modern techno-entrepreneurship. The programme builds depth in food processing technology and advanced concepts in food microbiology, food chemistry, food engineering, food safety, and food quality management.
Learning includes analytical techniques used in food industry and food research laboratories, tools to design and improve business processes, and applying food regulations and relevant law to practical issues in the food sector. The curriculum includes modules such as Advanced Food Microbiology, Advanced Food Chemistry & Analysis, Food Law & Ethics, Research Methodologies, Product and Process design, Advanced Sensory Science, Postharvest Physiology & Technology, and Advanced Food Toxicology. Students complete a Dissertation and an Internship for practical on-the-job training in a specified technological area.
